Sunday Meal Prep: Broccoli Cheddar Soup

I am getting ready for a new week! Here is what I made. I’ve been craving some turkey burgers and broccoli cheddar soup (specifically the Panera version). I only posted the broccoli cheddar soup below because to be honest… I followed no recipe for the turkey burgers and couldn’t tell you what I put in them because I just went with instinct. Here are the recipes I used below:

Broccoli Cheddar Soup (Panera Style kinda)

Ingredients

  • 1 tablespoon butter

  • ½ onion, chopped

  • ¼ cup melted butter

  • ¼ cup flour

  • 2 cups milk

  • 2 cups chicken stock

  • 1 ½ cups coarsely chopped broccoli florets

  • 1 cup matchstick-cut carrots

  • 2 ½ cups shredded sharp Cheddar cheese

How to Make

Melt 1 tablespoon butter in a skillet over medium-high heat. Add diced onions and stir until they seem cooked enough.

Whisk in flour to make a rous. Add 1 to 2 tablespoons of milk if necessary to keep the flour from burning, 3 to 4 minutes.

Add rest of milk while whisking constantly; stir in chicken stock and bring to a simmer. Cook until mixture is thickened, about 20 minutes. Add broccoli, carrots and sautéed onion; simmer until all the vegetables are tender, about 15 minutes.

Fold in Cheddar cheese until melted and serve in containers, a bowl orrrr a bread bowl.
