Sunday Meal Prep: Ricotta and Zucchini Flatbreads

One thing I enjoy doing every week to help reset is to meal prep. I think of meal prepping as getting ready for a new week! Recipes

Fresh Tzatziki Sauce

Ingredients

  • 1 cup nonfat greek yogurt

  • finely chopped or grated cucumber (just eyeballed it)

  • lemon juice (eyeballed it)

  • ½ tablespoon olive oil

  • garlic cloves or powder (also eyeballed)

  • 1 tablespoon chopped dill (forgot to add in picture… but definitley do so)

    How to Make

  • Throw it all in a bowl and mix it


Zucchini and Ricotta Flatbreads

Ingredients

* 2 Small Zucchinis

* 1 teaspoon Olive Oil (to be honest I did not measure this…)

* Just enough Lemon Juice

* Ricotta Cheese (also didn’t measure)

* Red Pepper Flakes

* Naan Bread

* Shredded Mozzarella Cheese (from now on… no number = eyeballing)

* 1 tablespoon Shredded Parmesan Cheese

* Chopped Fresh Parsley or Basil, for serving

How to Make

1. Slice the zucchini into 1/2-inch thick rounds and toss with oil and hey maybe add some garlic powder in there too.

2. Place rounds in a single layer on a roasting pan and broil just until browned in spots, about 3 to 4 minutes.

3. Heat the oven to about 400°F.

4. Mix it with the ricotta, lemon juice, and red pepper flakes.

5. Distribute the zucchini slices across the flatbread. Throw some ricotta on there and, then sprinkle with the mozzarella and parmesan cheese

6. Cook the pizza until the cheese is melted and bubbly, about 10ish minutes.
